Sounds like you havent got the right output mode selected. make sure pins 9-10 and 13-14 are connected on the AVIP connector and 11-12 are unconnected.

Also make sure you did not pick up the +5v for the LM1881 from the avip's pin #1 as per the xbox-linux tutorial. Pin 1 does not put out 5v. Instead take it from the SPDIF/optical audio's pin (cannot remember which off hand), it should give out ~4.8v.
