Simple option is to get a headphone amplifier and hook that up to the "LINE OUT" on your reciever or on your xbox.

If you tap the signal there you will automatically get any surround sound mixed down to two channel (left+right) audio.

The sound level will be adjusted by the headphone amplifier box and completely separate to your levels to your speakers (meaning you can turn the level all the way down, hearing sound only in the headphones)

If it were me, I'd open up the receiver and look for line-level audio outputs.  Then solder a 1/4" (or 1/8", depending on your headphones) stereo jack to left output/right output/ground.

Not knowing what kind of receiver it is, I wouldn't recommend that right now.

If you want something quick to play around with, buy an audio jack from Radio Shack.  Connect one "red" wire from each speaker through a, hmm, I'd say 330 ohm resistor, to its corresponding input on the audio jack, and then the black wires to ground.

Hmm, you'd probably also need to keep a load on the amp, so you'll need to wire up a load resistor.  I'm getting outside my league now, someone else may have suggestions...

Bah, I thought a little more about it and you probably don't want to hook headphones up to 100 watts per channel or whatever, even through appropriate resistors.

The first suggestion is probably best; find the audio points in the receiver before they get amplified and solder your connector to that...

Haha, OK figured it out.

Just unplug the toslink cable when you want to play at night.

You'd need one of these and one of these.  Just plug your regular Xbox RCA audio leads into one end, and your headphones into the other end.

I sometimes make things more difficult than they need to be...

I remember seeing 5.1 headphones on techtv for the x-mas list countdown. Might want to look into that. 5.1 phones sounds hella cool.
