I think you're up a creek.  That receiver has 5.1 inputs, but they're RCA (or composite) connectors.  Xbox AV Packs put out 5.1 information only in Digital Optical (though they can be moddified for co-axial connections).  You will either need to buy a different receiver or an additional piece of hardware to convert the optical into RCA/composite connections.  The only hardware I know of that will do this is a stand alone 5.1 decoder or a different receiver.

But I'm new to the whole 5.1 thing.  Maybe there's a way.  But from someone who just went through 3 different systems to get his 5.1 set up, I don't think you can do it with that hardware.

The speakers and sub woofer should still be good, though.

First chill out.  It's not that hard.  If you installed a modchip in your XBOX you can certainly set this up.

Just know, ok for every speaker there needs to be a cord with 2 wires right (+ and -)?  Now it shouldn't be to hard to find which speaker connections should go to which speaker (i.e. center, left, right, rear left, and rear right).

After that, if it has a built in tuner (radio) you can test that the speakers work.

From that point, for every component you have you'll need a Left/Right (red and black) RCA cable.  Connect your first component (DVD player?  VCR?) that way and see if you get sound.

Lastly, you can't get 5.1 with this receiver from the XBOX because it doesn't support optical digital in.

Well it will be analog surround sound (the same thing you get on a VHS tape).

You'd be better off though spending $200 on a whole new receiver though, like a newer Pioneer, that supports optical in, DDeX, DTS ES, and ProLogicII. (Such as the VSX-D712K)

Being that you allready have speakers, spending 200 bucks on a new receiver would be well worth it

It's just easier to run all the video and audio through the receiver.  That way you just change the input on the receiver instead of having to change the audio input and the video input on your TV.

The number of digital connections depends on the Receiver.  Most I've seen is four (2 optical, 2 co-axial).  I have a $200 receiver from Radioshack and it has 3 (as well as S-video and component in/out).  They've got a deal going on another receiver very similar to mine.  Receiver and speakers for $250.

its all very easy there labeled what there for. Basically there is a video input (S-video and composite), and a audio input(Right and left channel RCA's) for each video input(Video 1, Video2, Video 3, DVD). Then there is HD component inputs for component video and then one component video output. Then theres the outputs for the speakers a negitive(black) and positive(red) for each channel. Then theres a subwoofer output. Also theres monitor output(output to the TV). Then theres a AM/FM antenna input.

Then on top of that theres digital audio ins usually around 4 then theres a digital audio out.

Also there may be a multichannel in, and various other connections.
