I'm using evox and it works great on my HD, runs in 480p and very little of the screen is cut. You might want to make sure that your settings in the orginal dash are set your screen type.

I have the same problem - I want to support 480p on my dashboard.  My issue is that I have no idea what evox is or how to set it up on my system.  What do I need to do this?  (Hardware/Software).  Are there any posts where I can find information on that?
Your help would be greatly appreciated!

The original issue - Evox outputs in 480p.  You can configure your skin (or make your own) with a variety of tools or by adjusting the skin.ini file manually.  A lot of skins seem to position the text to close to the sides.  There are skin tools at www.allxboxskins.com which has been down for some time but is promised to reappear within the week.

For information on Evox and other utilities

www.xbox-scene.com
Tutorials section is on the main grey menu bar

In addition each forum here (there is one called Evolution X) has a series of informative sticky posts - many of which contain FAQs and guides.  Read them all.  Most pertinent is the Evox for Newbies guide.

Now that I think about it - you can patch your standard MS dash (search my posts with the word "Hex").  The problem is that: 1) you need to be running a hacked bios as the dash becomes unsigned code 2) you need to FTP into the xbox for which Evox is generally the tool of choice.  Round and round you go - to solve your problem and get your dash in 480p (with progressive DVD output as a nice bonus) you will need to do the whole xbox-mod learning curve as well as buy component cables if you don't have them already.

The problem is not in the dashboard itself...

the problem is in the skin like some people in this thread have said...
play around with the skin file and adjust them to fit into y our tv screen.

Well this stuff if way over my head.  Thanks for your help though.
As I was searching for information around the net I found the company that designed the dashboard for MS.  Their name is Rezn8.  I thought I'd contact them to see if they have plans for a new dashboard that supports 480p.  Really, it's silly that all (most) of the games support it, but the interface doesn't.  Anyhow, I was contacted by a guy who said "As far as I know, the X-BOX cannot display in 480p. It was not designed for that and there is no "upgrade" that would make it so. Displaying output in 480p is a function of hardware and would require different display circuitry."  I thanked him for responding and then told him that most games on the XBox do indeed support 480p.  His reply was "Interesting...I'll call the MS guy now and get back to you."
I haven't heard anything, but it's interesting that he didn't have a clue about how the system performed.
Thanks again for your answers.
