every time i reboot to try and change it (through my system settings), it just reboots to the old default one.

you need to press A twice once to set and once to save

then have a look through your config.xml file and you might have that dud softmod installer that has two <skin></skin> parts in it

ReDownload UnleashX and replace default.xbe with the one from the download.

the empty one then try changeing the skin again and it should stick
