you need a bios with the lba48 hack. then you need to format your hdd to support it.

go to the Format Menu in UNLEASHX and go to "FORMAT G DRIVE" and then it will show up

Speaking of which is it possible to have two HDs in my Xbox?  So I can go on live and have a nice amount of space.  Will a second HDD even fit in the case?

No, I would search to be sure but it doesn't look like you can use two hard drives, unless you don't use the DVD drive.  Plus a second drive would not fit in the case.
