Thats the thing about softmod intallers... even tho they are easy to use, you dont learn very much from using them (no offence intended). I used this
tutorial for doing UXE.
Anyway, i think you are describing the default skin... try going to system, then skins and selecting one of the others. If that doesn't work, goto file explorer, find the config.xml file (maybe on C:, but not sure about waffletools) and delete it (or move it, if you want to keep it around). Don't worry too much because UX will create a new, default one for you, then try changing the skin.
