Edit the cache_menu.xml to what you want and rename it to menu.xml.
You can take out the duplicate items(make sure to remove the whole "<item></item>" entries).

As for the preview windows and such, that can all be edited using the MXM skinning app or by using a skin with bigger preview windows(window size is dictated by the skin config).
