Is there any way to add a fan speed option to Evox?

Not that I have ever seen. That option IS in newer dashes such as XBMC, UnleashX, and Avalaunch.

Speaking of Unleash-X is there a way to install Unleash-X as my new dashboard when I start up the xbox.

What type of mod? If it is a hardmod, check here.
If it's a softmod, replace all the evox files with the unleashx files and rename the unleashx xbe to be the exact same as how the evox xbe was named.

Oh what if I want to go on Xbox live and I uninstall evox using the gamesave exploit I used (007 AUF) and then re-install evox will it overwrite the place where I put Unleash-X or will it mess up my xbox?
