Download a dashboard such as UnleashX which has a save game manager built in and load that when u want to manage ur games.

That or if u have ur xbox connected to ur computer get a program called Craxtion which lets u manage them from ur comp.

i guess what i was trying to say is that when im in Evo X menu, when i choose MS Dashboard, it just comes back to Evo X menu, nothing happened, so ...

Here is another alternative.  There is a program for your computer called XBox Game Saves Manager.  Check on the tools page.  It FtPs to your XBox and alows you to back up saves to your computer or from your computer to your XBox and delete them from your XBox.
