I've considered doing the same thing, and it should work. You just have to format each drive using the methods described in this board (which necessitates having one of the newest mod chips, or flashing your xbox bios with evox 2.2). So you'll end up having the same partitions on each drive, with the same files in some of those partitions. As long as you have a complete xbox "c drive" copy on each of those drives, you should be able to boot up fine, using EvolutionX to decide which games/movies/apps to play. With that external drive tower, all you'd have to do is hang a long IDE cable out of the xbox and then find a way to power the drives.
