5400rpm Hdd?

5400 would be preferable in general because they don't get as hot. Also a 7200rpm ( or even a 5400) harddrive will never hit its top speeds because of the xboxs slow 33mbit ide channell

I have a Maxtor  120GB 5400 RPM drive in my XBox. It's quite fast.

My understanding is that it's a 33MByte channel. Not Bit. And thats buss speed, not the speed of the drive. Even newer drives on the market won't hit 33MB/s speed for anymore then a quick burst from the cache.
So unless you plan to put a 10k or 15k drive in your XBox, the 33MB/s buss speed is, for the most part,  a non issue.

The Maxtor MaXLine II  series are 5400RPM with sizes up to 300GB.  They are pricy, but offer a 5 years warranty.  A good thing to have in a large drive.

I wouldn't think it would make a big difference - having a 5400 or 7200 rpm.  Just having the stored on a hard drive makes them load faster.
