As long as a Wireless 360 controller is sent the PS3 one can be any version ya want it to be. I obviously wouldn't want anyone to send a Wired 360 controller and a DS3, as there's nowhere to put the battery pack, or a pile of broken ones as that helps no one out, but any Wireless 360 controller and then any PS3 one I can fit together to make a PS360.
The total cost really depends on how ya want the controller setup. Say ya send a Wireless 360 and a DS3 and want them crammed together, that alone alone is $200, and since you'd prefer the mini USB connector that's another $20. The controller would still 'look' exactly like a 360 controller, all the buttons and stick caps would stay the 360 ones, less work for me, less cost for you, and some prefer the feel of the 360 buttons/sticks as they were designed with the 360 controller's shape in mind. The flat PS3 buttons don't feel too bad, nor do the PS3 stick caps, but that's mainly an aesthetic thing when ya get right down to it and makes the controller cost more as it's more work to install them.
The older version PS3 (SixAxis only) controllers I mentioned wanting are for a different project. Those are typically found in the 'smoke' colored shells and you'd have to either take it apart to tell it was that version for sure, or know exactly what ya were looking for when shining a flashlight in there. The older model #CECHZC1U would be closer to having that board version in it, though it could still be one of the newer SixAxis as I'm not sure when that switch over took place exactly.

I never looked into making it up with the USB plug but only 1 time over a year ago when I toyed with the idea of making one of these, long before the DS3 controllers came out, but it's something that yes I can do and it would mount inside the original PnC connector. That's a little more work as I need to modify the connector and then the 360 controller board, but completely doable. I could just cut a hole and mount it almost anywhere, but that's a little cheesy in my book and wouldn't look quite as nice.

Correct.
I honestly have no idea what games really make use of that 'pressure sensitve' (analog) feature of every button. Any racing game would where ya had the gas/brake setup on the face buttons there and used the D-pad for steering, but they're so sensitive it's not really even a good feature to begin with. I have no clue if any other games would really suffer from losing this option or not yet.
