Well lets look at the 360 and PS3 specs again
360=3 core 3.2ghz PPC
PS3=8 core 3.2ghz PPC64
360=500mhz ATI graphics 512mb shared with system
PS3=550mhz NVIDIA graphics 256mb dedicated to video
360=512mb DDR2? RAM shared with graphics
PS3=256mb XDR RAM dedicated to system...
they both have the same amount of ram, however they are using different kinds of ram and have distributed it differently. The PS3 uses a faster graphics card clock speed and obviously has a processor that is more powerful. The XDR Ram is considerably faster.
