As for the lack of 20gb PS3s... it's a shame they're in such short quantity... if I were to buy a PS3 I'd get the 20GB model without a doubt.

It's because the profit margins on the 20GB and the 60GB models aren't the same.  I saw the wholesale prices for each at work a few weeks back, and was surprised by the difference.  I don't remember the exact numbers, but I remember that the % was significant.
