I use a tablet
I keep saying that I need to get one, but I never do. This is one of those times. I need to get a tablet.

How do i make shadows?
Use the same shapes for the bodies (Ctrl + click the layer). Make a new layer and fill it with black. Remove the selection (Ctrl + D). Then use the Free Transform tool (Ctrl + T) to distort and skew it. You can right click on the layer once the transform border is around it. It will give you more options such as warp and perspective. Distort and warp your shadow to follow the contours of the object it's being cast on. Once you're satisfied with your distorted shadow (don't distort too much, though), bring the fill down on that layer a good amount. Experiment with it.
You might want to also change the blend modes for different shadows (color burn, linear burn, etc.). Shadows don't always look black or gray. Most of the time, they have a lot of dark colors in them. You also need to account for distance between the body and the shadow. Shadows that are closer to the body are sharper and bolder, whereas shadows further away are blurred and translucent.

Are you guys all just using the Lasso tool to cut out the people?
I use quick mask, layer masks, vector masks, various selection methods (lasso, polygonal lasso, etc.) and alpha channels to remove my subjects from their backgrounds. I never use the eraser. I find it best to be safe and have a large file size than to load my project and be unable to repair damage done by the eraser. Besides, by masking things, you can go back and correct mistakes you made long after you've closed and reopened your project.
Here's one of the things I've done in Photoshop. Here you can see I had to create shadows for the bikinis. I warped them and set their blend modes differently. I also had to account for the direction the sunlight was hitting them and for the distance between the bikinis and their shadows. I had to make their shadows more blurred than the other shadows in the picture because of the distance.

And here is the original:
