XBMC can directly rip audio CDs. I've never used the feature and it isn't heavily documented in the XBMC manual, so poke around your user interface and see if you can find the option. I'd check myself, but I don't have an Xbox with me right now.

XBMC Rips Everything in .mp3 to the folder you specify.

or just get you a hacked MS dash such as UIX. ITs a pretty freakin great dash. It has all the feature of the MS dash. PLus Skinning and FTP and DVD playback Capabilities. Ive got a Six tabe set up on mine.
