Just wondering if anyone knows of a way to remove the option to change the video mode from NTSC to PAL in the video settings menu?

I took a fairly quick look at the config.xml file and never saw anything in there that would allow me to change it. Perhaps I overlooked something?

Reason I ask is because I mod a lot of machines and would like to disable this feature so that people aren't switching their video modes and having to bring it back to me to fix.

Actually,... just to note - I've also got a few emulators that allow you to change the video mode as well. Unfortunately I can't remember which ones they are offhand, but I've also looked through their config files and never saw anything.
