Controller S Cable Repair/replacement.

Just completely desolder the terminal block, and solder the new wires to the place. The terminal block really only exists to make precise manufacture easier.  What they do is crimp the wires into the block so that they have a connector. Since the block provides proper alignment, they can have a few people putting the wires in the blocks for every person that actually solders it, speeding up the manufacture process slightly.  For just one person doing repairs, this isn't that important.
It does provide a minor amount of stress relief, but you can take other precautions to adjust for that.

For the black wires, the thicker one is the shielding for the cable, and the thinner one is ground.
Both wires go to ground, but the one on the outside is to reduce the cable interfering with the outside or being interfered with, while the one inside is a more direct common ground between the console and the controller.

I'm not brilliant with (de)soldering but I might well give that a go instead of what I was going to do. Thanks for the info/advice.

I thought the second black wire was probably shielding but I wanted it confirmed, so thanks for that too.

Any idea what the JWT (not PWT as I incorrectly wrote in my OP) marked on that shielding 6th terminal block position might mean?
