Since you already have a JTAG'd box, all the hard work has been done.
To update your dash, you need to locate Flash360 and run it on your xbox.
It is a program that can be run on your jtag'd xbox that can read/write/dump the nand.
(I'm not familiar with Nand Flasher 360 that you speak of, but it sounds like it does the same thing as Flash360).
I'm going to assume you are running Freeboot...
(If you are on XBR the process might be different, so please disregard the following info and wait from someone experienced with XBR to help you if that's the case - I don't want to misinform you)
Once you have a dump of your current freeboot (or original nand will work too), you can just follow one of the many guides in here to update to the new dash:

You are correct in that the Nand Flasher 360 seems to do the same thing as Flash360. I was given the option to Flash, Dump or Write. I opted to do a Dump to a folder called New Folder on my external drive and I now have a file called orig_nand.bin, which I assume is the NAND file (which really means nothing to me, truthfully!).
I am using OS X, and there doesn't seem to be a program for that yet, but I can get at a Windows PC so it's a non issue.
Step 3: It says to power on with a component or composite cable to get the CPU key. I don't think I have either. Will this work with HDMI or will I need to get the above cables. Is there any other way to get this key?
Step 9: Motherboard. How do you find out what motherboard your Xbox has?
My main worry is that if I do this, and mess it up, can I revert or do I have a brick?
