Player 1 goes to join an xbox live game...  When you get to the matchup screens, player 2 hits start and it'll ask for a profile...  For a guest, unless you pick another xbox live profile, it'll tell you that you can't play the game with the profile you picked, and to hit A to continue as a guest, or B to cancel...  Just hit A and there you go...
