Removing System Update Folder

I wanted to remove the system update folder from MLB 2k11 so it wouldn't ask for the update.
First I deleted it in power iso but it left me with a 2.8mb file. Then I extracted it with Xbox360 iso extract and it took out the folder. But how do I rebuild it to an iso so I can burn to disc?
Or is there a better way overall to do it?
