Ok, I am posting this so that if someone else is having the same problem hopefully this will help them out.  I finally got it to rip to the HDD.  I used XBOX Backup Creator v2.5 Build 0230 to rip the game to the hard drive.  I then used NME Associator to EXTRACT the SS.  Then used NME Associator to MERGE the *.iso and SS.  For some reason ImgBurn would not start the burning process so I used XBOX Backup Creator v2.5 Build 0230 to burn, using the option within XBOX Backup Creator of BURN ENGINE "XBC".

I was actually surprised the backup worked.  I had no idea what I was doing.  This isn't the way I normally do them.  I usually use Schtrom to rip, NME Associator to convert, and ImgBurn to burn.  But Schtrom just wouldn't rip this game for me.

I had that problem using Schtrom V3.0. Sosotiit helped me saying that xbox backup creator might work. Well it worked out fine! But Schtrom V3.2 also worked! I donow, maybe wrong installation... Anyway, best regards from Athens.
