Yes a stealth-patched games will work, but not the actual stealth feature.

Steath images are identical to any other 360 image other than the 4096 bytes before the security sector are replaced with the PFI & DMI.  In other words... any combination of stealth / non-stealth works... but only a stealth firmware & stealth backup give you a truly stealth image.
