I Need To Capture To Record/stream, Here's My Situation.

You could use a solid-state AV source selector to switch between 360 and PC on your monitor.

'Fraid I don't have the know-how to suggest anything for the capture hard/software. I'd like to help, but I don't want to speak from my ass. I'm sure somebody else here will have a few ideas though.
