That would be my guess. Any decent Faroudja scaller would be able to handle the 6 pixel difference without a problem Most LCDs on the market (yes even the new and expensive ones) use total rubbish for scaller chips, they're designed to scale TV resolutions to the screens native resolution, and that's about it.
A good test would be to put the VGA output into 1280x720 mode...

Normally I'd agree but this problem doesn't sound like one that would be caused by a cheap cable.

The fact that your display doesn't offer any VGA adjustments tells me that the problem is probably in the TV it self. Most HDTVs just aren't made to accept a VGA signal from anything other then a PC (which has internal adjustments). The fact that it doesn't offer any kind of controls is a sure sign that VGA support was nothing more then an after thought.
Based on the pictures you've posted it looks to me like you've got the sharpness on component video cranked WAY too high. Not only that but based on the fact that the text in the 2nd picture is missing the outline it almost looks like the Xbox 360 is outputting in 720x480 mode.... IIRC it drops stuff like outlines in the lower resolutions to make it easier to read. Even still the first picture doesn't look "vibrant" so much as it looks like your adjustments are all way out of whack. I see blooming familiar with brightness/contrast being set too high and I see outlining familiar with sharpness being set too high. Also it looks like the gamma is too high in general. I could be wrong though, it is an edited photo of a picture of a TV being displayed on a completely different monitor here.
Try your Xbox VGA in 1280x720 mode and see if it looks similar to your component video cables.
try your PC in 13
60x768 to see if it looks the same as your Xbox VGA
Just because your PC looks correct doesn't mean it's the console's problem PCs have a whole lot of software controls to adjust the picture, not to mention they could be using completely different color spaces which makes the way your TV accepts the signal act differently (and without an adjustment on the TV you're stuck with whichever one they designed it for).
