From what I can tell, the component cables will not work.  I'm not very familiar with SCART, but I have a JVC receiver as well.  It has a ton of video inputs in the back (all composite, S-vid and component), and all I can see on your are SCARTs.

All you need is a receiver that has optical IN and the A/V cable that has the optical OUT.

I use the HD cables that came with the 360 premium (US) and an optical cable to my receiver (Onkyo SR703).  I get perfect 5.1 audio...  except for the positioning of my speakers.  The wife won't let me mount them in a good spot.  :/
