Yes 1080i is better then 720p... but only a handful of TV's have native 1080i resolution. So whatever the native res is on the tv is what you should use on the xbox.
For a CRT choosing 1080i is usually better because that is usually it's native resolution if it is a true HD Television. You should always try to use the native resolution of the display device if you can.
1080i is not universally better than 720p however. The x360 renders internally at 720p and 480p for games, for the console the superior resolution to use is 720p, however 1080i will give you very good results with minimal resolution loss on most displays. If you have a true 1080p (DLP) display then you will experiance no resolution loss, but there will be some minor screen artifacts such as mouse teeth, the human brain automatically fixes these artifacts however and you typically will not even notice them.
