I don't know what you've done that's corrupted five separate gamesaves, but I'll tell you how to get the ring since you can't do it by yourself. It
is easy, by the way. What you're not doing is talking to NPCs like I mentioned earlier.
If you sneak into the Countess' room in the daytime when she's not there, you won't find the ring you need. You'll find that ring you mentioned earlier. The correct ring is in the jewelry box when she is asleep in bed. A good time to find her in bed is 2am.
Talk to the beggars. They tell you to talk to Hlidrad (or whatever her name is). She's always with the Countess so it'll be easy to find her. You have to persuade Hlidrad and get your persuade number high to get some information out of her. Otherwise, she'll complain about not trusting you, and that she can't divulge that information to a stranger. Hopefully at this point in the game, you have a rudimentary understanding of how the persaude minigame works. If you max it out without getting a high number, bribe her until you're into the 80s or 90s. Hlidrad will tell you about the secret passage in the basement once you've persuaded her high enough.
Go to Andjari's (or whatever her name is) house and tell her that the lizard guy tried to sell it to the Countess. She says she'll double your reward.
Now, get inside the castle and find the door that leads to the basement. Don't go in yet. Wait until about 1am before going into the door. Make sure no one sees you when you go in. Once you're inside, you're safe to make all the noise you want until you exit to the Countess' room. Equip your torch because you might need it to see this area. Search the basement for a broken barrel. Inside, you'll find a lever that triggers a secret passage. Follow the path all the way to the Countess' room. You'll have to trigger a few more secret passages along the way. You should be able to figure out how to trigger them by yourself.
Once you get to the Countess' room, unequip your torch and leave that door open, but back up until you're far from the doorway. You don't need invisibility like that guy mentioned earlier. Remove your boots/shoes. This makes it easier for you to sneak. Face the doorway until you see the guard making his rounds. If he travels left toward the Countess' bedroom, stay there and wait. When you see him head right and exit that area, that's when you make your move.
With your shoes off, run uncrouched toward the bedroom. Once you approach her doorway, crouch. Sneak quickly to her jewelry box and get the ring. Sneak back to her doorway and stand up. Now run back to the entrance of the secret passage. If you did it properly, you'll be back in the secret passage in time to see the guard heading left to check on the Countess again, and he won't have seen you. Close the door to the secret passage, put your shoes back on and finish the quest.
That wasn't hard, now was it?
