I bought the "arcade unplugged" game for 360 but all the games seem to be demos. Whats up with that?

Wik: Fable of Souls, Geometry Wars, Bejeweled 2, Outpost Kaloki X, Hardword Backgammon, Texas Hold Em  are all full versions.

You must have the disc in the drive to play the full version.  If you already downloaded the game then there will be a double entry, one that is the demo and one with a CD icon that will be the full game.
