and don't forget about whatever Bioware puts out, and of course Lost Odyssey. there was a pretty long list somewhere on the forums with 10-15 games on it.

Mass Effect
Operation Darkness
Phantasy Star Universe
Two Worlds

Not true RPGs but there are afew sort of "adventure RPGs" you might want to check out GUN, Kameo, and Ninty-Nine Nights. All of which arn't really RPGs but incorporate those elements and RPG fans tend to find things they like in those games.

Also there are a number of really good Xbox 1 RPGs that are BC such as Fable and Jade Empire that are worth checking out.
