Moving Content From A 500g Drive On A Jtag Box

So I've spent the last week moving/patching saves and stuff onto a 500G 3.5" drive - attached to my box using the underboard SATA hack.  I want to move everything off that drive onto an "official" 250G drive - but I can't have both drives on the box at once.

I've tried using Xexloader to drop the content from the 500G to an external USB, but it likes to think its done copying data half way through a transfer (or locks up).  I've been trying for a while, but never get a full dump of all the directories.  I'm not about to sit and copy/paste each of my 100s of directories from /Content/000000000000000/
 
I've tried hooking the 500G directly to a PC and using xplorer360, but it doesn't find Partition3.

Is there another tool for PC that I can use that will read a XFAT formatted drive that isn't of a "MS approved" size... ie. 500G?

blah - that didn't work.  Might be that my drive is not an "official" size.  I could list files/dirs once and then x360 segfaulted.

2 options:

1. format the drive with fat32formatter http://tokiwa.qee.jp/EN/Fat32Formatter/index.html

I had a similar problem trying to transfer roms over from USB HDD to my 360 internal HDD it would only transfer a small portion of the files. I was using Xex Loader 2.6.

I used Viper 360 and it worked perfectly.

All of this would be great if the stuff I wanted were not already on the drive.
