There are multiple things in the way of this.
Have you tried running a 3d game over your network connection? The 3d acceleration redraws the screen way way WAY too fast for your network connection to handle.
Also, as far as I know when a xbox game is running it is the only thing in memory (other than the bios), so there is not much room for polling the screen and writing to a tcp-ip stream.
