I used several tricks like a RF ON/OFF switch, so I don't have to open the cab each time to turn it on; and a U3100 arcade monitor with a x2vga adaptor. The controls are an xarcade DIY board

A couple of ideas you might like:
I don't know how many power switches you've got total, but you can get multiadapters (like standard 4 way extension leads), that have a master plug socket which you could plug the Xbox into and then plug the other STufF into the "slave" sockets and when you (remotely) turn on your Xbox, the the other STufF would be turned on too.
Sorry for that long explaination, but I didn't know how else to write it.
Also, you've only listed Crazy Taxi 3 (apart from gun games) to put on there, how about Marvel Vs Capcom 2, Guilty Gear XX #Reload, Capcom Vs SNK 2 and Dead Or Alive 3?
If you like puzzle and or shooting games in arcades, try getting hold of Shikigami No Shiro (1, 2 or Evolution) for a good vertical shooting game and Puyo Pop Fever for a fun and very bright puzzle game.
