You have to setup the ip to something out of your routers range. It says how to do it in xex menu readme.

Turn parental controls on, disable Live under Family Settings.

Use parental controls like others mention to stop connecting to live.

Just to be safe you can also use manual network settings, put an incorrect default gateway and dns entry so there is no way for the 360 to go onto the internet.  But it'll still be able to talk to your LAN.

My DNS and gateway for example is 192.168.1.1.  So I put 192.168.1.99, which is wrong.

That's what I did. Works great, only issue is the Windows Media Center seems to not like it when you don't get your network info automatically via DHCP. Not a big deal for me, as I've never really used that much anyway, but some people might be bugged about it not working.

I would like it so my 360 can connect to my network so I can ftp to it (tried using my computer as gateway and got nowhere) and I want Freestyle to be able to connect.  So what are other people with jtagged systems doing?  Is having connecting to live disabled been enough to prevent the "you've been banned from xbox live" screen?  Can I plug in the ethernet cable after booting into freestyle safely?

Disabling Xbox Live in the system setttings works fine for me. I can still FTP to XexMenu/Freestyle/XM360. Haven't been banned in a month, so I doubt I ever will be.
