I purchased the game a couple of days ago, and I've got a jtaged 360. If I try to play, will it ask me to update my dash, or anything? I really don't want this to kill my box.

Also, is there a firmware, or patch, or anything out yet that would let me play from a legal backup I made of the game?

xbr is based on the current normal dash., so no recent game will ask you to update.
For protection from future accidental updates, you can remove the r6t3 resistor from the back of your motherboard.

Is it possible to play from backup of my game via Xex Loader? Would I need to modify the drive firmware, or would I just be able to copy it to my hd, then run it from there?

You need to do a lot of reading for a starter. There is much to learn with homebrew apps and such for an XBR 360. Once you install the game to the hard drive using the NXE dashboard then you NXE2GOD to patch it to load without a disk.
