Yes a bricked 360 will still work fine as a MCE Extender, it will still play dvd movies and audio cds too.

Actually "bricked" can mean a few things....

1. Completely Dead.  Does not power up or gives a hardware error on power up.  (No use to you)

2.  Laser damaged.  Powers up but does not read any discs (No use to you as it may not read DVD or Audio CD)

3.  Eject broken.  Works fine even to play games, but needs a manual eject.

4.  Lost DVD key.  (This is fully functional but can never play XBox games again.  This would work for you)

I spoke to someone yesterday who had corrupted the fw on the Hitachi drive within their 360. He said the 360 would no long boot and gave an error message. I asked what happens if he disconnected the drive and then tried to boot. After testing he said that the 360 now booted to dashboard and therefore could presumedly be used as an MCE extender.

I'm assuming that this means that the 360 does some kind of check on the DVD drive during boot up and presumedly checks to the KEY that matches the hardware.
