You can run multiple Kai Engines on a network, as long as they're each on a diff. subnet (but same external IP is fine).

You can run only one UI per Engine.

You can connect as many consoles per Engine as you like, but they will also need to be on the same subnet.

1.... 1 Kai engine for 1 xbox. Not 1 engine for muliple xbox's.
You should look more in to XLink. See the "Set my Arena Status" option?

Well jceruti, I don't know what to tell you. We run two engines in this network on two subnets and never had any troubble with it. You must have some bad config somewhere.

You could install Ethereal and check why the Xboxes aren't showing up in the diag. mode. But an real easy way out of this is to use on of the pcs with xp on the Xbox which is "2niced", and bridge that connection... See?

No. This is false. That will not work. It will just be two subnets with the same iprange then. 2 nics = 2 subnets = 2 ipranges.
