I have just tried to connect through the second NIC on my PC to connect to the XBOX.  I looked at the tututorial, but i only talks about Static IP's.  I have a Dynamic Ip on my internet and cant seem to get the second NIc that is running to the XBOX to work.  Can ya give me some help, or point me in the right direction.  Thanks Guys.,

Just set up the TCP/IP properties of your second nic to be something like 192.168.0.1.  Make your XBOX 192.168.0.2.  Doesn't matter if the first nic IP is static or dynamic.

Only problem is if you want the xbox to see the internet.  If so, you need to enable internet connection sharing for your PC.  If you do that then your XBOX can be set to dynamic and you wont have to set everything.

Just a note, I use a NAT router and my box and computer both see the internet as NAT clients.  Great for streaming shoutcast directly from xbox to router (computer doesn't need to be on).  Only time I need my computer is when I run Gamespy.
