Newbie Q: How To Edit Files?

Are hardware mods required to edit files?  Can someone post a link to a basic tutorial/faq about this.  I just want to unlock cars/tracks in PGR2 so my kids will get off my back.  I know nothing of xbox mods/hacking, etc.  Thanks!

PS I'm trying to figure out if I can implement the following solution:

 Open cars :
Edit the file in 'FRONTEND' named 'CARS.ini'
If you look under each vehicle name, you will find 'Tokens = xx' - XX being the value of the car in tokens... just change the value to 0.
