knowing how stuff goes I wouldnt doubt someone would try to hack the game and have all 3 exclisive characters in the xbox version

the key to hacking most aspects of Soul Calibur 2 lies in root.olk, and figuring out the .olk file format

Yeah, that's what I figured, but I only have the demo to go by. Have you tried anything on it yet? If you have, I'd be interested to know what you have tried/accomplished.
