I don't think there is something you can to be really precise (i.e. shutdown after 5:18:01) but in your system settings menu there should be an auto off selection.

If you have xbmp as dash, you can set in minutes when it will shutdown after a while of inactivity.

but there isnt a program where you can set this time straight on the xbox.
