I'm curious about whether anyone has figured out how to do VOip and Video Conferencing with Xboxes. If not, does anyone think it would be possible?

Should be possible using Linux.  I think someone mentioned nexgen doing it too?

Hmm.... I'm currently developing apps for my "day job" which use cameras, including USB interfaced cameras.

It might be interesting to write a support library for a USB camera.

I'm kind of thinking it would be cool to support it in a game we're looking into.... so you could see your opponents, for example, and chat using the USB camera. That would be cool.
