The newest BIOS files look for evoxdash.xbe while it boots.  If you want to use Xbox Live then you need to turn the modchip off so it bots retail.  I wouldn't worry about the Banks yet... all you need is the X2 BIOS for now.

How can I tell what bios I have on, apparently when I had it done days ago it comes with the latest ones, I know linux 1.8 is on bank 2 and it doesnt even work, so I want to reflash bank 2. But if that goes wrong does it mean I can switch to bank 1 and reflash bank 2 from evoX?

If so how do I do all of that

you can't flash one bank at a time.  you need to flash the entire thing with a 1mb bios.
